Does anyone have the recipe for San Antonio raw cubers in brine?

I've tasted these really great peeled whole cubers that are sold by mexican street vendors in San Antonio, Tx. There in large 5 gallon jars and the brine is a very light shade of green. Does anyone have the recipe?
